Formerly known as the Fess Parker, the Hilton Santa Barbara Beachfront is the largest hotel in the area. Its a 20 min walk from the Funk Zone, but has a pool and is on the water.

The Waterman has cozy rooms but prime time location in the trendy Funk Zone neighborhood. It also has a pool!
